Blossoming Lotus in Portland, Oregon, is a very special place.
We headed there after our visit at the Portland VegFest and were pretty impressed! The place was packed when we got there, so we were very happy with our spot at the bar. For a table we had to wait a lot longer, I’m sure.
As this place not only serves vegan dishes, but also some raw ones, we both decided to have our very first ever fully raw vegan meal 🙂 So exciting!
As a starter we went for the Live Nachos, spicy live chips, topped with nacho cheese sauce, pecan chorizo, diced avocado, cashew sour cream, red onion, tomato, scallion and cilantro.
As entrees I ordered the raw lasagna, and my husband treated himself with the Live Green Curry, vegetable ribbon noodles, with thai spicy avocado green curry sauce, cherry tomatoes, spiced cashews, sesame seed, and cilantro.
I have to say, eating a raw lasagna was kind of odd because you have this literally warm picture in your mind, and when taking your first bite you’re kind of disappointed. Yeah, sorry, but it got better with every bite I took, and it tasted very lovely. My husband’s curry was incredible, even though it was raw. It was not only good, it was like food-art, just gorgeous!!
Wow, but the dessert! I’m still drooling when looking at these pictures!! Oh my, we had all three kinds of truffles they offered that night, and I could not decide which one was the best, they were all incredible! The raspberry cheesecake though, was absolutely phenomenal!!! I literally never ever had such a good cake!! And we’re talking raw vegan here! This wonderful cream based on coconut and cashew, what can I say, I totally fell in love with it!! SO SO SO good!!
