Baked Rosemary Potatoes

Here’s another one of my favorite go-to recipes which combines two of the best worlds: potatoes and rosemary 🙂

These go with vegan burgers or with corn and burgers or you just skip the sides and dive right in which is by the way MY first choice, ha!

For two people all you need is:

– 1.5 lb yellow potatoes or fingerling potatoes, rinsed, unpeeled, quartered or diced depending on size
– leaves of 2-3 sprigs of rosemary, coarsely chopped
– coarse sea salt to taste
– olive oil
 

Place potatoes on a baking dish, add rosemary and sprinkle sea salt and olive oil over potatoes.  Bake at 450F until browned and tender (use a fork to check).

Done 🙂
