Oh, how I love this recipe!! I love it so much that I had to share it with all of you!
This is my super easy colorful pasta salad which I like because of it’s sourly fruityness. It’s a wonderful love affair between herbs, tomatoes, cucumbers and olives.
Here’s the recipe:
1lb penne or similar pasta
2 bunches of chives, coarsely chopped
2 handful of basil leaves, coarsely chopped
2 cucumbers, peeled and chopped into 1/2 inch pieces
4 cups grape tomatoes, washed and quartered (or halved depending on size)
1 8.4 oz jar black olives, drained and rinsed
2-3 garlic cloves, minced
3 Tbs olive oil
6 Tbs white wine vinegar
Cook pasta according to instructions, drain and set aside. They should be cooled to room temperature before use.
Combine all ingredients in a big bowl and enjoy 🙂
